Avocado toast with tomatoes, chickpeas and radishes

Sometimes you are out of inspiration of what to make for lunch. But with avocado you can vary in many different ways. Avocado’s are nutritious and rich in fiber and natural fats. They will give you energy all day and make sure you can keep up the good work!

For today’s avocado variation we will use chickpeas, cherry tomatoes and radishes as a topping. The variation of these three toppings are refreshing, tasteful and healthy and will give you enough energy for the whole day. Other ingredients for this recipe are three slices of bread, two avocado’s and a handful of almonds. Find the list of all ingredients below and add them to your shopping list!

List of ingredients:

  • Three slices of bread
  • Two avocado’s
  • Six cherry tomatoes
  • Two radishes
  • Can of chickpeas
  • Shaved almonds
  • Salt and pepper
  • Lime juice

Recipe for the avocado sandwiches

  1. Start with cutting the avocado’s in half. Take out the pit and use a spoon to take out the avocado, put in a bowl and use a fork to smash the avocado. Add some lime juice, salt and pepper to taste and mix well.
  2. Toast the bread slices for about 2 minutes on both sides.
  3. In the meantime, cut the cherry tomatoes and radishes in slices. Let the can of chickpeas drain and put in a bowl.
  4. Spread the smashed avocado on the toasted bread and add the three different toppings. Add some salt and pepper to taste and some shaved almonds.
  5. Enjoy!
